Bacon & Egg Spaghetti

Our family has littles. Which means, inevitably, we have picky eaters. It’s tough to find a dinner option that my kids will accept, that has an acceptable amount of veggies for me. Bacon & Egg Spaghetti (or Carbonara for those over age 10) is one of those options… 

Italy’s answer to Brinner is tasty, easy to adapt, and is on the table in 20 minutes!

Bacon & Egg Spaghetti

aka Carbonara

Serves 8

Ingredients:

  • 1/2 package bacon, cut into 1 inch squares
  • 4 cloves fresh garlic, chopped
  • 1/2 onion, chopped
  • 1/2 cup bell peppers*, chopped
  • 1 cup chopped frozen broccoli*
  • 1/2 cup frozen corn*
  • 1/2 cup frozen peas
  • 1 box spaghetti- cooked
  • 4 eggs
  • 1 cup shredded Parmesan**

*feel free to substitute any veggies you want or that your family finds acceptable.

**as always, in any recipe where I include cheese or chocolate chips, this unit of measurement is up for debate. I highly suggest measuring with your heart and emotional needs for the day.

Put a large pot of water on to boil for the spaghetti.

Put a large skillet on medium high, and begin to brown bacon, onion and garlic. Once the bacon is cooked through, add in the rest of your vegetables and cook until they are seared a little brown.

When the water is boiling, add the spaghetti and cook for 10 to 11 minutes or whatever the box says. Keep cooking the bacon and vegetable mixture while your noodles are boiling. 

Drain pasta, and return to pot. While it’s still piping hot, add your bacon and vegetable mixture. Crack eggs, one at a time, into the pasta and veggie mixture. Stir the entire pot very well after each egg, mixing the raw egg entirely into the food. The heat of the noodles will cook the eggs into a sauce that coats the pasta. Do this with all four eggs. After the eggs are thoroughly mixed in, you will have what looks like an Alfredo sauce on your noodles. Next, add the shredded Parmesan cheese. if it comes out of a green shaker tube, I’m never speaking to you again. Real Parmesan cheese is one of the few things that makes life worth living. Sprinkle enthusiastically with fresh ground black pepper. 

Stir the entire pot until the cheese is melted into a delicious creamy dream come true.  throw it into bowls and serve! Don’t tell your kids about the vegetables, but emphasize the bacon and eggs heavily.
